FOR ROASTED POTATOES
Preheat the oven to 210°C.
Sprinkle the remaining tsp salt and the fennel seeds over the top.
If the crackling hasn’t crisped, place it under the grill for 1 to 2 minutes and watch carefully.
After taking it out of the oven let the meat rest for around 10 mins before carving.
Roast for 55 mins turning once, until golden brown and with a bit of a crisp.
Add the chilli and chives to the potatoes just before serving
