Boy oh boy do i LOVE me some Ramen! Now for those of you that have no idea what is, its a Japanese noodle soup, and there are a few ways ok making it, some take like 2 days and some you can whip up real quick. For our last episode of #CookSmarter i thought id show you how to make a really quick and easy chicken ramen that still carries a lot of flavor and uses ingredients that you should have in your kitchen. WHAT YOU NEED
2 chicken breasts
Salt and freshly-ground black pepper
2 tsp sesame oil
2 tsp fresh ginger, roughly chopped
3 tsp fresh garlic, roughly chopped
3 tbsp low-sodium soy sauce
2 tbsp mirin
2 liters chicken stock
2 large Brown mushrooms, sliced
1–2 tsp sea salt, to taste
2 large eggs
1/2 cup spring onion sliced
2 Green chillis sliced
4 sheets nNori
WHAT TO DO
FOR THE BROTH
Heat the oil in a large pot over medium heat, until shimmering. Add the garlic and ginger, and cook for a few minutes until softened. Add the soy sauce and mirin, and stir to combine.
Cook for another minute. Add the stock, cover, and bring to boil. Remove the lid, and let simmer uncovered for 5 minutes, then add the mushrooms. Simmer gently for another 5 minutes, and season with salt, to taste. Take out the mushrooms set them aside for plaiting. Strain the broth and add it back to the pot to heat up.
FOR THE EGG
Fill a pot with enough water to cover the eggs, and bring to a boil. Gently lower the eggs (still cold from the fridge) into the boiling water, and let simmer for 7 minutes. transfer the eggs to the ice bath to stop the cooking process. Wait at least 5 minutes, or until cool enough to handle, then carefully peel away the shell and slice in half, lengthwise.
FOR THE CHICKEN
Season the chicken breasts with salt and pepper in a medium to hot non stick pan and grill until dark and golden on both sides. Set aside.
TO PUT TOGETHER
Meanwhile, chop the spring onion and green chilli. Slice the chicken into slices and set aside, add the ramen noodles to the broth until cooked . add the noodles into two large bowls. Add the sliced chicken and the broth. Top with the fresh spring onion, sliced mushrooms, green chill, nori and the soft boiled egg.
