PUMPKIN AND SWEET POTATO FRITTERS WITH BACON AND SPRING ONION

A pumpkin fritter has always been one of my favorite things to enjoy with a Sunday lunch. Its sweet, crispy, savoury, and can be such a highlight on a plate.
Whats cool about pumpkin and sweet potato is they lend themselves both so nicely towards sweet and savoury dishes. I used them to create these outrageously delicious, sweet, savoury, and salty snacks for you to enjoy in front of the tv or to bring out on a platter for your friends and family to enjoy.
WHAT YOU NEED
2 tsp baking powder
1 Tbsp sugar
250 ml buttermilk
300g mashed pumpkin & sweet potato
50g spring onion, chopped
150g bacon bits, cooked

WHAT TO DO
To prepare the fritters, combine all the ingredients in a large mixing bowl to form a batter.
Deep fry about 1 Tbsp of batter at a time until golden brown and crispy.
