Preheat the oven to 200.c Line a baking sheet with foil or baking paper. Mix all the spices together and add them to the sweet potatoes together with the salt and the oil. Lay them flat onto the baking sheet and roast them for 30-35 minutes. Remove from the oven and set aside.
FOR BLACK BEAN
Heat the oil on low in a small pan, add the garlic and the chilli and lightly saute for 3 minutes. Add the beans and cumin and season with salt and pepper to taste.Cook for 8 minutes.
Finish off with the butter. Set aside.
Add the onion, avo, garlic into a bowl and roughly mash with a fork. Add the lemon juice, olive oil and season to your liking. Stir and taste, adjust flavours accordingly.
FOR GARLIC SOUR CREAM
In a bowl add all the ingredients and stir well, check for seasoning and adjust to your liking.
FOR CHUNKY TOMATO SALSA
In a bowl add the chopped onion, tomato, coriander and jalapeno. Stir well and add the salt, pepper and pickle juice until you are happy with the flavours.
