Banana Bread Popsicles

What you need:

  • 125 g butter room temperature

  • 200 g sugar

  • 2 eggs

  • 3 ripe bananas, mashed

  • 1 teaspoon vanilla extract

  • 125g Walnuts, crushed or 200g peanut butter (optional)

  • 250 g flour

  • 1 teaspoon baking powder

  • 1 teaspoon bicarbonate of soda

  • Spray n’ Cook

    Cream Cheese Pudding

  • ¼ cup plus 2 tablespoons sugar

  • ¼ cup cornstarch

  • pinch of salt

  • 2 ½ cups cold milk

  • 1 teaspoon vanilla extract

  • ½ cup cream cheese, room temperature

What to do :

  1. Pre-heat the oven to 180ºc and grease a standard size loaf tin with Spray & Cook.

  2. Beat together the butter and sugar light and creamy in a mixing bowl.

  3. Add the eggs one at a time, mixing well after each addition.

  4. Add and mix in the bananas.

  5. If you’re adding walnuts or peanut butter (optional for banana bread with a twist) add to batter

    now and mix in.

  6. Sift together the dry ingredients then stir into the batter.

  7. Transfer the batter to the prepared loaf tin and place in the oven.

  8. Bake for 45 minutes until a skewer inserted comes out clean.

  9. Remove from the oven and allow to cool before removing the banana bread from the tin.

  10. While the cake is baking, make the pudding.

  11. Whisk together the sugar, cornstarch, and salt, then whisk in the milk.

  12. Bring to a gentle simmer over medium heat, whisking constantly, until mixture starts to thicken,

    and small bubbles come to the surface, about 5 minutes.

  13. Whisk in the vanilla and cream cheese until smooth.

  14. When your cake is cool, but your pudding is still warm, assemble the pops.

  15. Spoon a layer of pudding into your ice-cream mold.

  16. Break the banana bread into chunks and layer into the bottom of the mold (push down lightly so it

    is compact.

  17. Add another layer of the pudding, then another layer of banana bread chunks, lightly compacting

    into the pudding.

  18. Repeat layers and finish off with a layer of pudding.

  19. Insert the ice-cream stick and then freeze overnight.

    When frozen, enjoy!
