What you need:
3 cups of flour
1 tsp salt
1 tsp baking soda
1 tsp baking powder
1 Tbsp ground cinnamon
1 cup vegetable oil
1 ½ cups white sugar
2 tsps vanilla extract
2 cups grated zucchini
100g chopped walnuts
What to do :
Preheat oven to 170°C and grease a 20cm x 10cm loaf tin with spray and cook.
Sift flour, salt, baking powder, soda, and cinnamon together in a bowl.
Beat eggs, oil, vanilla, and sugar together in another bowl.
Add dry ingredients to the wet mixture and beat well.
Stir in zucchini and nuts until well combined.
Pour batter into loaf tin.
Bake for 60 minutes, or until a skewer inserted comes out clean.
Cool in pan on rack for 20 minutes.
Remove bread from pan, and allow to cool completely.
