In a jar add the brown vinegar, onions, salt and sugar. Close the jar and shake well and set aside.
FOR THE BURGER
In a dry pan toasts the seeds until fragrant. Set aside
Grate the garlic, ginger and chilli, set aside. Then in a bowl grate in the potatoes, once grated, using your hands, squeeze as much of the potato liquid as possible.
Into the grated potatoes, add the toasted seeds, turmeric, salt and frozen peas. Mix everything well.
Heat a nonstick pan with frying oil. While the pan heats up form your potato and pea patties. This recipe will give you 4 patties.
In your hands shape and press the patty and the place into the pan. Cook for about 5 minutes on each side without moving them around, once they are golden brown and crispy all over remove them and place on a kitchen towel to drain, repeat with the remaining 3
Mix the mayonnaise with tomato sauce and season lightly.
Spread the burger sauce on the top and bottom of your bun. Top with the patty, sliced tomatoes, pickled onion, coriander and cheese, top with the bun.
