Now trust me, I BEEN cooking for BAE and breakfast in bed does WONDERS for me every time! Haha … So I wanted to share a seal proof banana bread with you. 2 slices, toasted, topped with honey yoghurt and a fried cinnamon banana … YOU ARE IN THE GAME, my friend!!
WHAT YOU NEED
3 bananas, mashed
1/2 cup plain fat free Greek yogurt
1/2 cup vegetable oil
1 cup sugar
1 teaspoon vanilla
2 cups of flour
1/2 tsp salt
1 tsp baking soda
FOR HONEY YOGURT
½ cup yogurt
2 tbsp honey
WHAT TO DO
Preheat the oven to 180’C and spread a loaf tin with cooking spray.
In a large bowl mix together mashed banana, Greek yogurt and oil. Mix in vanilla and eggs.
Add flour, sugar, salt, baking soda and mix until just combined just until there are no remaining streaks of flour. Pour into the loaf.
Bake for 1hour, until a toothpick inserted into the center of the bread comes out clean.
Allow to cool completely on a wire rack before turning bread out of pan and slicing
Lightly toast the bread until golden, set aside.
Mix all ingredients together in a bowl.
1 banana sliced in half
Unsalted butter for frying.
1 tsp cinnamon
In a small pan heat the butter and cinnamon, add the bananas cut side down, fry till golden on each side.
To plate up,
Place a good amount of honey yogurt to the bottom, then the toasted banana bread, followed by the banana slices, golden syrup and a dusting of icing sugar.
